Yields 4 sandwiches
Grilled seitan steak with char marks

A soft, pillowy bun smeared with garlic sauce, stacked with smoky seitan steak, and piled high with sautéed onions and peppers. Make the steaks the day before, and sandwich night comes together in about 20 minutes.

Ingredients

  • •4 Smoky Peppercorn Steaks
  • •1 tbsp olive oil
  • •1 large onion, thinly sliced
  • •2 bell peppers, thinly sliced
  • •¼ tsp salt
  • •4 soft sandwich buns
  • •¼ cup vegan garlic sauce

1. Make the Steaks

Start the day before. Follow our Smoky Peppercorn Steaks recipe and chill them overnight.

2. Sauté the Peppers and Onions

Heat the olive oil in a large skillet over medium-high heat. Add the onions, peppers, and salt, and cook for 8 to 10 minutes until soft and golden at the edges. Set aside.

3. Cook and Slice the Steaks

Choose your method:

Grill whole for 3 to 4 minutes per side, then slice thinlyOr slice first and sauté in the same skillet for 4 to 5 minutes until crispy on the edges

4. Build the Sammie

Smear each bun with about 1 tablespoon of garlic sauce. Stack on the steak slices and pile high with peppers and onions.

Pro tip: Toast the buns cut-side down in the skillet for 1 minute after the veggies come out. They soak up the leftover flavour and hold up better under all that filling.

Make It Your Own

Swap the garlic sauce for vegan mayo, chimichurri, or smoky BBQ sauce. Add vegan provolone for a cheesesteak-style melt.
